Cooking Hacks

Here are a few hacks to make cooking easier:

To make cooking easier

  • Make a gravy out of ginger, garlic, onions, tomatoes, curry powders and store it in the fridge. Use this gravy while making chicken, cauliflower and potatoes.
  • Store grated coconuts in the freezer.  You can use it as and when needed.
  • When you boil eggs add a little bit of salt in the water so that the shell comes off easily.
  • When you make ginger, garlic or chili paste add a little bit of salt and hot oil and store it in the fridge. This can be used for a couple of days.

Fish Cutlet (with tinned tuna)

  • Tuna – 1 tin (small) in oil
  • Onion – 1 medium
  • Green Chillies – 3 chopped very fine
  • Ginger – 1 small piece chopped fine
  • Potatoes – 2 small boiled and mashed
  • Oil and salt – to taste
  • Curry leaves
  • Egg white
  • Bread crumbs

Squeeze out the oil from the fish. Keep it aside.

Pineapple Cake

1. Corn flower – 2 tea spoon

  • Pineapple juice – ¼ cup
  • Orange juice – ¼ cup

2. Pineapple chopped small – 1 cup

  • Sugar – 2 table spoon

3. Butter – ½ cup

  • Powdered sugar – ½ cup

4. Eggs – 2 (beat)

5. Maida – 1 cup

  • Baking powder – sieved together

6. Orange peel – 1 tea spoon

Apple Cake

1. Sugar – 2 ¼ cups

  • Coconut Oil – 1 ½ cup

2. Vanilla essence – 1 tea spoon

3. Eggs – 3

4. Maida – 3 cups

  • Salt – 1 pinch
  • Soda bicarbonate – ¾ teaspoon

5. Nuts fried in ghee – 1 ¼ cup

6. Finely chopped apple – 3 ½ cups

Carrot Cake

  1. Eggs – 3
  2. Sugar (powdered) – 1 ½ cups
  3. Oil – 1 ½ cup
  4. Maida – 2 cups (sieved)
    Cinnamon (powdered) – 1 pinch
    Salt – 1 pinch
    Baking Powder – 1 ½ tea spoon
  5. Grated carrot – 1 cup
  6. Sugar – ½ cup (caramelized)

Pre heat oven at 220 degree Celsius. Beat 1,2,3 together adding little by little. Add in 4 and then 5. Lastly add in 6. Transfer into a baking dish and keep it aside for 10 minutes. Reduce and set the heat to 180 degree Celsius. Bake the cake for 1 hour continuously. If cooked well take it out.

 

 

Oats Dosa

Oats – 100 gm

Soak the oats in water. Grind it in the mixer. Add salt to taste and make dosas in sim fire. Can make fillings as in a masala dosa.

 

 

 

Wonder Sandwich

  • Bread – 6 slices
  • Butter – 1 table spoon
  • Flour – 1 ¼ table spoon
  • Hot milk – 1 cup
  • Egg – 1 (beat)
  • Salt – to taste, pepper powder
  • Cheese – 1 cube grated
  • Corn (cooked) – ½ cup
  • Spring onion – 1 stem chopped
  • Butter – as needed
  • Garlic paste – 1 table spoon

Kitchen Tips

  • While making cutlets always take one, dip in egg white, bread crumbs and fry to see of the mixture is in the right consistency. If changes need, do that to the rest of the mixture and then do the final work.
  • When you bake, instead of buttering the pan, use a butter paper on the baking pan for better results.
  • While making pasta, reserve the stalk of it. Use it while preparing the sauce for thickness.
  • Before using baking soda, to make sure it is good, put a pinch of it in half a cup of water. If it has a fizz, it is good.

  1. Chicken – 1kg
  2. Onion – 3 chopped fine
  3. Garlic – 1 tea spoon
  4. Ginger – 1 tea spoon
  5. Tomato – 1
  6. Garam Masala – 1 tea spoon
  7. Grated coconut – 1 cup
  8. Gren chillies – 3
  9. Coriander leaves – 1 cup chopped
  10. Puthina leaves – ¼ cups
  11. Cashew nuts – 5
  12. Perumjeerak – ½ tea spoon
  13. Oil – 1 cup
  14. Salt – as needed
