Mocha Truffles

  • Dark Chocolate – 200 gm
  • Fresh Cream – ½ cup
  • Instant Coffee Powder – 1 tea spoon
  • Coco Powder – ½ cup

Method

Heat cream in a pan on sim fire.
Keep stirring.
Chop the dark chocolate and add the cream to it.
Keep on stirring for about 3 minutes.
Cool this mixture in a refrigerator for seven hours.
When hard, take it as scoops.
Coat then with the coco powder and refrigerate it for some more time.

 

 

Prawn Cutlets

  1. Prawns – ½ kg
  2. Coconut – ½ of one grated
  • Green chilies – 5
  • Jeerak – ½ tea spoon
  • Garlic – 10 betals
  • Turmeric – 1 small piece
  • Salt – as needed

    3. Beat egg  - 1
    4. Coconut oil – as needed (for frying)
    5. Bread crumbs –

    Method

  1. Clean the prawns well
  2. Grind 2 together to the fine paste in prawns.
  3. Make this into cutlets, dip in the gee, then in bread crumbs and deep fry.

 

 

 

Tomato Omelette

  • Tomato – 3 chopped fine
  • Basin flour – 4 tea spoon
  • Green chillies – 4 to 5 chopped fine
  • Ginger – small piece chopped fine
  • Onions – 1 chopped fine
  • Coriander leaves - as needed chopped fine
  • Salt – to taste

Method

Add little water to basin flour and make a paste. Add in the chopped vegetables to this. Heat little oil in a pan. Make omelets out of this. Fry both the sides until cooked.

 

 

 

 

 

Tender Coconut Pudding

 

  • China grass – 10 gm
  • Water – 1 cup
  • Tender coconut water – 1 ½ cups
  • Milk maid – ½ tin
  • Milk – 2 ½ tin
  • Sugar – 5 desert spoon
  • Tender coconut pieces – 1 cup

Method

Channa Roast

  • Channa - 400 gm (soaked and cooked)
  • Green chillies - 5
  • Ginger - 1 piece
  • Chilly powder - 2 teaspoon
  • Turmeric powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Coconut oil - 150 ml
  • Cardamom - 5
  • Small onions - 7
  • Maida (Flour) - 1 cup
  • Basin flower - 1 cup

Cooking Tips

  • Make sure, the oil when heated to fry something, it is of the right temperature. If the temperature is high the sides will get brown before it gets cooked properly inside. If the temperature is low oil will get absorbed.
  • For poorees add rawa to the aatta while preparing the dough.
  • Add in a pinch of soda bicarbonate in the baji mix to get a better texture.
  • If coconut milk is added to the baji mix instead of water, it tastes excellent.
  • Always prepare dough for chappathy with hot water and curd or milk.

  • Fish – 2 pieces
  • Oil – ½ tablespoon
  • Chilly powder – 1 teaspoon

  • Ginger garlic paste – 1 table spoon

Balsamic Vinegar – 3 table spoon
Sugar – 1 table spoon
Pepper – ½ table spoon
